Courtney Lindley is the co-founder of MAD Concepts Group, where he leads strategy, development, and investment across a growing portfolio of hospitality brands. With a background in corporate real estate and finance, Courtney has played a key role in expanding iconic brands like Starbucks and Potbelly, and now leverages that expertise to scale concepts with purpose. A Texas Christian University graduate with a degree in Finance and Real Estate, Courtney brings a sharp eye for market opportunities and a steady hand in high-growth environments. Through MAD, he continues to acquire, develop, and operate standout businesses that blend performance with heart.
Kendra Shier, President of Jakes and Tacos & Avocados, joined Jakes in 2017 bringing 35 years of hospitality leadership to MAD Concepts Group. She is the driving force behind the daily operations of our food brands and the fierce protector of MAD’s people-first culture. She ranks the responsibility of “Culture Keeper” above all else. Prior to joining Jakes, Shier served as Vice President of Operations and Marketing for Nestle Toll House Cafés, Bread Winners Cafes and Vice President of Marketing for Pizza Inn, Pie Five Pizza and The Melting Pot Restaurants. Shier served as the Chairperson of the National Restaurant Association’s Marketing Executive Group and is a member of the Texas Restaurant Association, National Restaurant Association and holds a bachelor’s degree in Corporate Telecommunications from Texas Tech University. Her mission is simple: take care of our team, so they can take care of our guests.
Bob Gregg is the co-founder of MAD Concepts Group, where he leads with a people-first mindset and a passion for operational excellence. With decades of hands-on experience, Bob currently oversees daily operations for our brands. His operational leadership spans multiple acquisitions and transitions, merging teams seamlessly into MAD’s culture-driven systems. Before founding MAD, Bob was instrumental in scaling Potbelly Sandwich Shop from five to over 400 locations, authoring the operations manual and developing key programs that fueled national growth. Bob brings deep knowledge, sharp instincts, and a commitment to building teams that make a difference.
Jenny Donovan is a seasoned operator & the go-to multitasker at MAD Concepts Group, where she oversees repairs & maintenance, systems rollouts, process development, & new restaurant openings. With 15 years of experience at Main Event & a deep understanding of operations, Jenny joined Jake’s in 2019 & became an integral part of MAD Concepts in 2021. She’s known for her ability to juggle it all—often with a smile— & her dedication to supporting teams on the ground. Outside of work, you’ll find her scrapbooking or catching up with friends over margaritas.
Lisa Gregg serves as the Director of Catering at MAD Concepts Group, where she oversees catering operations, community partnerships, events, systems maintenance, and more—all while bringing heart, hospitality, and a sharp eye for detail to the role. A Wyoming native with a background in commercial production and real estate coordination, Lisa has worked with major brands like McDonald’s, CoverGirl, and Asahi, managing complex logistics and client relationships. Now based in Dallas, Texas she and Bob have been a team since their college roofing days and they’ve been building ever since.
Jill Price, known affectionately as “The Keeper,” has been a cornerstone of Jakes Burgers & Beer since 2009. As Director of Accounting & Human Resources, she manages all things behind the scenes—accounting, payroll, & office administration—with precision & heart. With over 29 years in her field, Jill started her career in software, testing & supporting accounting systems before transitioning into corporate finance. A Plano native, Jill earned her BBA in Accounting from Texas State University. When she’s not balancing the books, she’s probably singing along to her favorite musical.
Jon Wynkoop is a Senior Accountant at MAD Concepts Group, where he manages payroll, reconciliation, cash analysis, & financial reporting across the company’s brands. With a background in restaurant accounting since graduating from UTA in 1998, Jon brings deep knowledge & attention to detail to every project. He works closely with operators to provide actionable financial insights, streamline inventory control, & maintain clarity in metrics & performance. Originally from Silverton, Oregon, Jon now calls Plano home.
Laura Hill brings decades of experience and a passion for hospitality to her role as Training Coordinator at MAD Concepts Group. A first-generation Texan, Laura began her restaurant career in the 90s, opening and training teams across DFW before taking on GM roles in both Arizona and Texas before joining the Jakes team as District Manager. Today, she leads training, coordinates operational structure, develops menu documentation, and supports team growth at every level—from hourly staff to leadership. Laura studied at Tyler Junior College and Texas A&M, and outside of work, she enjoys cooking with family, hiking, and exploring new places.
Alli Brodine is a creative force at MAD Concepts Group, blending operational knowledge with branding expertise to help bring new concepts to life. With a degree in Radio/TV/Film & a minor in Marketing from UNT, Alli’s early career included marketing roles at iHeartRadio and House of Blues, before moving into restaurant operations at Bread Winners. She later earned a Web Development certification from SMU & joined MAD Concepts in 2024. Today, Alli leads digital brand creation, marketing strategy, & concept development with a unique ability to connect design with execution. When she’s not building brands, she’s tending her vegetable garden or riding her bike around White Rock Lake.
Abby joined MAD Concepts Group as Social Media Manager after earning her Bachelor’s degree in Business from the University of North Texas in 2024. With a background in restaurant operations and experience supporting new shop openings & training with Floyd’s 99 Barbershop, she brings both frontline insight & strategic thinking to her role. Abby focuses on promotional marketing with a creative edge; capturing the heart of each brand & connecting with the community through storytelling, culture, & accessible, engaging content. Whether highlighting team moments or building buzz around new concepts, Abby brings MAD’s voice to life across every platform.
Chef Guillermo Tristan, known as “GMO,” brings over 20 years of culinary expertise to MAD Concepts Group as Executive R&D Chef. A Houston native and longtime Dallas resident, he has played a defining role in shaping North Texas’ dining scene–from early days on the line at Gosman’s Dock in Montauk to leadership roles at Charlie Palmer, Boulevardier, Remedy, Ida Claire, Mexican Sugar, Whiskey Cake, and Harwood Hospitality.
At MAD Concepts Group, Chef GMO leads innovation in menu development, modern cooking techniques, labor optimization, and team growth. His passion for food is rooted in both creativity and community, which he continues to foster from his home in North Oak Cliff, where he lives with his wife and son. Outside the kitchen, he enjoys experimenting with recipes, playing music, collecting vinyl, and tending to his home garden.
Luis Gonzales has been part of MAD Concepts since 2009, starting as a fry cook at Jakes before becoming Kitchen Manager at Jakes Sundance Square for nine years. In 2020, he stepped into his current role as Culinary Lead.
With earlier experience at Logan’s Roadhouse and Red Lobster, Luis developed a deep respect for every role in the kitchen. Today, he oversees training and development across cook stations, recipe testing, catering execution, scheduling, ordering, and new restaurant openings. He plays a key role in maintaining kitchen standards, streamlining operations, and ensuring consistency throughout our kitchens all while supporting and mentoring new staff as they grow in their roles.
A Fort Worth native, Luis lives in Southwest Fort Worth and enjoys cooking at home, spending time with his granddaughters, and restoring classic cars especially his dream project, a 1969 Chevy C10 truck.
Born and raised in Dallas, Christina Alberti joined MAD Concepts Group in September 2025 as an Accounting Specialist. With a decade of experience in healthcare, she brings a strong work ethic and adaptability to her new role, where she is eager to grow her career in finance and operations.
At MAD, Christina manages key accounting responsibilities including entering invoices, billing, processing checks, and sales, with plans to expand into payroll. Known for her motivation and attention to detail, she plays an important role in keeping day-to-day operations running smoothly.
Outside of work, Christina enjoys visiting arcades, catching a good movie, shopping, and spending quality time with her family.
